CuliVino Hospitality Management and Consulting announces Chef Tom Gray’s newest restaurant, Electric Dough Pizza Co., is open in Jacksonville, Fla. Located in the historic San Marco Theatre building, the handmade pizza-centric restaurant offers rectangular artisan high voltage pizzas featuring an airy dough with Detroit-style crispy, cheesy edges.
“We are delighted to welcome guests to Electric Dough Pizza Co. to enjoy our new space in this historic building, and our exceptional food and beverage offerings served with heartfelt hospitality,” said Gray, who announced the concept and location in 2024. “As a resident for over 25 years, the historic San Marco community is close to my heart, and I am thrilled to bring a fresh menu and unique ambiance to this iconic location and create a dining destination that the entire family can enjoy.”
The atmosphere of Electric Dough Pizza Co.’s 4,200-square-foot interior celebrates the historic theater as a work of art while modernizing the building’s interiors with stylish design details and contemporary functionality. Design highlights include the historic theater’s original film projector, the building’s original 1930s exposed brick walls and a vintage-style vanity mirror shaped backsplash over the bar. For Electric Dough Pizza Co.’s interiors, Gray engaged the Atlanta-based architecture and design firm ai3, and Urban Partners Construction of Jacksonville, to bring the restaurant’s vision to life. A variety of thoughtfully-designed spaces throughout the restaurant offer guests the opportunity to enjoy dining experiences for any occasion.
Electric Dough Pizza Co.’s menu focuses on fresh flavors and high-quality “better for you” ingredients. Gray has partnered with Shaping America’s Plate Founder and CEO Pam Smith, RDN, and Culinary Innovation Partner Chef Cliff Pleau on Electric Dough Pizza Co’s menu. Shaping America’s Plate is a leading multi-dimensional food and beverage consultancy firm known for its innovation, delicious wellness and approach to sustainability.
At Electric Dough Pizza Co., the stars of the show are Gray’s rectangular artisan next level pizzas. The name Electric Dough references the Italian-imported electric oven that the pizzas are baked in and the pizza’s handmade, long-fermented Roman-style dough. The electric oven produces a pizza with a crispy crust. The menu includes:
The Mighty Quinn - roasted local mushrooms, Fontina, porcini truffle aioli, arugula, cacio e pepe sauce, and chives.
The Godfather Part II - a meat-lover’s dream, Genoa salami, soppressata, coppa, sausage, pepperoni, spicy Calabrian chili crunch, Parmesan, and Ed’s red sauce.
The Duuuval - pulled BBQ chicken, Chef Tom’s pimento cheese, bacon, pickled red onions, pickled jalapeños, datil pepper sauce, scallions, and Ed’s red sauce
Along with pizza, Electric Dough Pizza Co. offers seasonally-inspired salads and a rotating selection of gelato and sorbets. Beverages include a full cocktail bar, domestic and imported beer, and wine, along with organic craft sodas and zero-proof offerings. The menu includes:
Lavazza Nitro Cold Brew Espressotini - Georgi Vanilla Vodka, Mr. Black Coffee Liqueur, Hoodoo Chicory Liqueur, Lavazza cold brew, and cinnamon syrup.
The Matchatini - Corazon Blanco Tequila, Bosscal Mezcal, Italicus Bergamot Liqueur, Amarula Cream Liqueur, agave, and matcha.
The Azalea - Hibiscus-infused St. Augustine Vodka, Pama Pomegranate Liqueur, pineapple juice, hibiscus syrup, and lemon.
Electric Dough Pizza Co. also has a retail area offering take-and-bake frozen pizzas, fresh pastas, from-scratch sauces, house made dips and other products to enjoy at home.
General Manager Emily Scott leads the Electric Dough Pizza Co. team. The restaurant is a counterpart to Gray’s two full-service Jacksonville restaurants, Prati Italia at the St. Johns Town Center, and Town Hall, situated a few storefronts from the San Marco Theatre location. About Chef Tom Gray. Chef/Restaurateur Tom Gray is a leading force in the North Florida culinary and restaurant scene. Gray is the Owner/Executive Chef of Prati Italia, Town Hall and Electric Dough Pizza Co. restaurants in Jacksonville, Fla.
