Fresh European black truffles are prized by Michelin star and master chefs around the world. Top quality fresh black truffles are hard to find. They’re not sold in retail markets, and the quality and provenance of the ones you do find are very uneven. The American Truffle Company is making the same truffles we sourced for our Michelin star and master chefs at the truffle festival available to you. Have you ever been curious about why the truffle business can be so profitable? European black truffle demand far exceeds the supply, and their orchards are highly profitable endeavors. Discover what goes into growing the most sought after food in the world. Join Chief Scientist Prof. Paul Thomas and Chief Truffle Officer Robert Chang of the American Truffle Company® for an in-depth all-day seminar on the fundamentals of the science and business of truffle cultivation. Gain insights into the scientific and business factors one must consider in successful truffle cultivation from two leading truffle experts. Tour a working truffle orchard and see how dogs are used to find truffles in live demonstrations. Share the excitement of unearthing truffles from the soil!

Dogs are an integral part of harvesting truffles. Just like rigorous science is required for successful truffle cultivation, a scientific approach is key to successful dog training. ATC’s partner CPDT-KA dog trainer Alana McGee will demonstrate how truffle dogs successfully hunt and find truffles in the Raymond Vineyards Truffle Orchard.

This full-day experience includes the Scientific Truffle Grower Seminar in the morning, a buffet lunch with fresh black truffles prepared by the Michelin starred La Toque Restaurant, truffle orchard tour and dog training demonstration. Fresh Périgord black truffles will be shaved on your lunch, so you can find out for yourself why they are so sought after! 9:00 am - 11:30 am - Wild Mushroom Foray:

Yes, this is a weekend full of truffles, but we couldn’t resist a walk in the woods in search of wild mushrooms! Join experts David Campbell and Norman Andresen for a delightful foray into the woods above Napa Valley. Follow along as they forage for exotic mushrooms in their native habitats at the height of the mushroom season! You’ll get to savor delicious truffle quiche bites made with fresh black truffles, before venturing out to enjoy nature as you learn the basics about mushrooms, including the process of mushroom identification, as well as proper handling and cooking options for edible mushrooms. Most excitingly you’ll be able to keep any that you find!

Past forays have led to such fascinating mushrooms as the popular and deliciously fruity, peppery chanterelle; and candy caps, whose sweet aroma often finds its way into cookies and ice cream; also matsutakes, highly prized (and priced!) in Japanese cuisine and, more recently, in Michelin star restaurants around the world. Foragers also came across many breathtakingly beautiful, non-edible species, such as toadstools. Foraging for wild mushrooms should only be done with knowledgeable mushroom experts, and you will not find a more qualified expert than fungi foray leader David Campbell, the Bay Area Poison Control Center’s go-to mushroom guy.

Begin your day in true Napa style at the Westin Verasa Napa with a glass of sparkling wine in hand as you interact with international Michelin star/master chefs in a rare up-close and personal exchange. Before they dive into a weekend of creating culinary magic, hear about their passion and secrets for cooking with truffles. Then savor bites of black truffle canapé while learning how to select, store and prepare them with Chef Ken Frank of La Toque. Discover surprisingly interesting and fun facts about truffles and truffle hunting with world-renowned truffle scientist Prof. Paul Thomas of American Truffle Company® (did someone say “Sex and Truffles”?) and CPDT-KA certified truffle dog trainer Alana McGee.

Interactive Truffle Experience:

Do you know the difference between black and white truffles? How about between European and native North American truffle species? Would you be able to discern them by sight or smell? Let American Truffle Company®’s Chief Truffle Officer Robert Chang guide you as you see, smell and touch a variety of truffles, and experience for yourself why some people love the Italian white truffle, while others prefer the Périgord black. Meet & Greet The Truffle Dogs, Reception On The Terrace At Bouchaine:

No truffle immersion is complete without truffle dogs. With your glass of wine in hand, you’re invited to meet and greet our team of adorable truffle dogs (petting encouraged!) on the spectacular terrace at Bouchaine, where you will look out over Bouchaine’s serene gardens and expansive vineyards. This is your chance to get up close and personal with our furry friends who are the stars who find the truffles in truffle orchards!

Cooking Demonstration:

Flying in all the way from Canberra, Australia, Chef Damian Brabender will entertain you to no end with his charm and expertise with truffles. Having been the Executive Chef at Canberra’s The Truffle Farm restaurant, which specializes in truffles, he is intimately knowledgeable with how to showcase the last ounce of flavor from truffles. He will share that expertise with you with a live cooking demonstration using truffles, in the spectacular show kitchen at Bouchaine.

Winery Truffle Lunch:

This delectable multi-course lunch will be prepared by a duo of star chefs, including guest celebrity chef Elizabeth Falkner of TV’s Top Chef fame, as well as Host Chef Ken Frank of La Toque. Every course features fresh truffles paired with Bouchaine’s most exclusive wines.
