Open: Year Round
About Us:
Just like our 50-year-old HMR Vineyard, Adelaida's roots run deep. As one of the pioneers of the Paso Robles AVA and the Adelaida Distict, many have witnessed our evolution over the last 34 years. With time and hard work Adelaida Cellars has grown. We would not be where we are today if it weren't for the efforts and dedication of those who came before us and those who worked alongside us.
In 1964, Dr. Stanley Hoffman planted the first Pinot Noir and Gamay Noir vines in the craggy hillside terrain of what is now the HMR Vineyard in Paso Robles' Adelaida District. In 1967, Dr. Hofffman planted some of the regions first Cabernet Sauvignon vines and continued in 1973 to plant Chardonnay in the HMR Vineyard.
The Van Steenwyk family aquired Hilltop Ranch in the 1970's located just up the road from the HMR Vineyard. Shortly thereafter, they began spending weekends at the old farmhouse on the property.
In 1981, the first vintage of Adelaida Cellars Cabernet was made by John Munch followed by the first vintage of Chardonnay in 1982.
In 1991, the Van Steenwyk's and John Munch became partners and built the first Tasting Room on the present property that is now home to Adelaida Cellars. That same year the Van Steenwyk's, having purchased the Viking Ranch in the 1980's,
planted the Viking Vineyard to Cabernet Sauvignon and Syrah. A few years later, the family purchased the 419 acres of the original 1,200 acre Hoffman Mountain Ranch and began restoring the vineyards to good health. This included the original HMR Cabernet Sauvignon, Chardonnay, Gamay Noir, and Pinot Noir.
